TOFU TAHINI WONDER NOODLES

Cut up 1 peeled zucchini and a handful of baby carrots. Add to a pan with olive oil on high heat. Add garlic powder and salt and let sit a little bit, stirring occasionally. Cut up 1 block of teriyaki tofu (e.g., Nasoya brand) and add to a separate pan with olive oil spray. Let sit for 4-5 minutes. Drain your konjac angel hair noodles and add them to the pan with the veggies. Add coconut aminos, edamame, and cilantro, then mix it all together. Add 2 tsp tahini and 1 tbsp hummus to the noodles and mix thoroughly. Flip the tofu after it sizzles and gets golden on one side. Add more coconut aminos and sear for another 4 minutes. Plate the noodles, add the tofu, and sprinkle with everything but the bagel seasoning. Enjoy!
