If you have ripe bananas at home, make this!!! These muffins have simple ingredients and are the perfect mid-afternoon treat for a gloomy or cold day ✨ They are so soft, moist and also only take 30 mins to make!
1. Preheat oven to 350F.
2. Mix wet ingredients in a bowl: 3 ripe bananas, mashed; 2 pasture raised eggs; 1/3 cup olive oil; 1 tsp vanilla.
3. Mix dry ingredients in another bowl: 2 cups of gluten free oat flour (blended from 2 cups of GF quick cooking rolled oats); 1/4 cup brown sugar or coconut sugar; 1 tsp cinnamon; 1 tsp sea salt; 1 tsp baking powder.
4. Mix dry ingredients into wet ingredients and combine well! Then add as many chocolate chips as you desire and pour into a greased muffin tray (makes ~9-11 muffins).
5. Bake for 25 minutes (or until baking pick comes out without anything on it), wait for it to cool and enjoy!!
