🥗 crispy chickpea spinach salad 🥗

(1) drain and wash a can of chickpeas. pat them dry with a dish towel. add to a pan with 2 tbsp olive oil, and add salt. keep mixing for some 10 minutes. (2) meanwhile, cut some cherry tomatoes (around 8-10), some baby carrots (8-10), and organic peas (I use the greenwise frozen and make them beforehand). also added leftover green beans:) (3) add all veggies to a pan with some olive oil, and 1 clove of garlic. mix it all under medium high heat until warm and the carrots are softer. (4) use spinach as base, add veggies, add chickpeas. top with 1/2 avocado.
